This entry needs to start with a BIG announcement: I haven’t baked since last Thurday so please anyone don’t get angry with me as I didn’t call you up to my kitchen for supper and nonsense talk. I got some nice recipes taht I want to share with you and so, in these long long boring days, I will try to put them all on this blog. I guess it’s even better than just sitting here and and there looking emotionlessly at the pile of stuff to revise .. hahaha exams are coming and as usual, it’s always the greatest tiem for baking, swimming, jogging and of course writting smt like this.
I love pies and tarts. They look just rural, classic but irresistibly attrative and appetizing. I have tried some times, some successfull and some … One of the some dot dot dot is apple pie!!! I bet that soem of you are laughing at Kate as how come she couldn’t make apple pie, kinda the most basic and simplest pie ever. Yes, I failed 2 times before this trial. With me apple pie looks really easy to make, just a crust, apple, cinamon and butter. That’s all but I didn’t know how difficult it would be until I tried.
This pie at first I just made it because I’m so stressed and frightened that day, 4th of March, when I witnessed a tragedy of my friends. Then I want my close friends to test it, however, one of them, Andy, was too busy that day to come up *poor him and how idiot he was >:P. If I was him, I would come anyhow haha. At least there are a pie and a girl waiting for me lol*, another one, Alex, was full and didn’t want to eat smt sweet at night. Luckily, the other, Anne, agreed to come *she always love my cakes :”>*. And she didn’t come alone… Douglas and Alex (another Alex. Actually this is not the last Alex in this entry :D) appeared and insisted that I bought the pie from Fairprice T__T *and they ate the most >:P*. I informed them some news and there was just one word to describe that moment: TOugh. It’s tough for me and for them also. I had to thank Anne a lot as she was the one who broke that gloomy atmosphere.
Alex just tried to put my pie back to the oven as he wanted it hot T__T, how weird >:P. And Doug got allergic with my artichoke tea 8-}. Since then I got 2 things to say about him: one is that he speaks the loveliest Singlish ever (seriously the kind of thing is damn cute when it comes from his mouth) and the second is that he is the first person I have met that got allergic with artichoke *the only one I guess*.
Then Ann left first for her study and another Alex came in haha. I promised she was the last Alex of the night. And so we chatted, we laughed and all pieces of my pie soon dissappeared. I called it a successful one :”>.
Too much on nonsense talk, let’s start with the recipe 😀
2 cups flour
1/4 cup sugar
1/2 cup butter, room temperature
1 large egg or you can replace by milk with equivalent volume
Cream butter and sugar together and then add 1 1/2 cups flour gradually. then add milk/egg to the mixture. Knead well and you may see that your dough is still sticky and that’s why we still have 1/2 cup flour left :D. Add them little by little and knead the dough untill it doesn’t stick to your hands.
Grease a 8 inch pie pan with butter then press 2/3 of the dough over the pan. Seal at edge and use a fork to randomly poke the bottom part of the pan. Often people freeze the dough for around 20′ and then roll it but I’m not so good at rolling dough so I choose to press the dough first and then freeze it 20′ before baking time 😀
5-6 apples, halfed and thinly sliced
1/4 cup butter, cubed
cinnamon sugar: 1/3 cup – what I did is that i mixed 1 1/2 teaspoon ground cinnamon with 1/3 cup sugar 😀
1 tbsp lime juice
3 tbsps flour
Mix apple, lime juice and flour together. Then place the apple on the crust, one layer by one layer. After each layer, don’t forget to sprinkle cinnamon sugar :D. on the top layer, put cubeb butter over.
Now is the most interesting part as it will make your pie look just the same as what you see in cake shops. The 1/3 dough remaiming, roll it out and cut into long (as long as you can cover the pan) and thin slices (1cm wide). Place them over the apple layers and seal at the edge so that they won’t some out when you bake. Place 2 perpendicular layers so that you can get a net over your pie.
Then put the pan in central rack of the oven. we bake at 350F for 45 min’. You should check it at around 40 mins, if the edge is slightly brown, that means your pie is ready to be eaten :D. After a while your pie will look like this :
